Rinse the pork belly and catfish with salt and water, then cut into bite-sized pieces. Line the bottom of a pot with sliced shallots, place the fish and pork on top, add a little water and 3 tablespoons of pepper sauce, and simmer over low heat.

Add fish sauce to taste, along with the white parts of the green onions and bird’s eye chili peppers.

When the fish and pork have absorbed the flavors and the sauce has thickened, transfer to a plate and top with a little fried garlic.
