Panjiri Ladoo are usually made during festivals. This is a traditional recipe from India, often prepared during religious celebrations like Janmashtami, the festival celebrating Lord Krishna's birth. Ingredients

30 minutes
Makes 3 or 4 servings
  1. 1 cupwhole wheat flour (about 120 grams)
  2. 1/4 cupsemolina (about 40 grams)
  3. 3/4 cuppowdered sugar or boora (about 90 grams)
  4. 2 tablespoonsshredded coconut (about 15 grams)
  5. 1/4 cupfinely chopped cashews, almonds, raisins, and melon seeds (about 30 grams total)
  6. 5-6green cardamom pods
  7. 3/4 cupghee (about 150 grams)

  1. 1

    Gather all the ingredients. In a skillet over medium heat, lightly toast the shredded coconut.

    In the same skillet, heat a little ghee and roast the cashews and almonds until golden brown.

    Remove the nuts and coarsely crush them. Also, grind the cardamom into a powder.

    Add the semolina to the same skillet and roast until it turns light pink. Then add the wheat flour and roast both together on low heat.

    When the flour turns light brown and gives off a pleasant aroma, turn off the heat.

    Let the roasted flour cool slightly, then transfer it to a large plate. Add the powdered sugar and toasted coconut.

    Mix in the chopped cashews, almonds, raisins, melon seeds, and cardamom powder. Gradually add ghee and mix well.

    Combine thoroughly so the mixture holds together. Shape the mixture into ladoos of your desired size.

    Your delicious and nutritious Panjiri Ladoo are ready to serve.
