Rinse the basmati rice well and soak for 15 mind drain. In a pan, heat ghee add cumin seeds, cinnamon sticks, cloves and big cardamom. Saute until fragrant. Add carrot, potato chunks and green peas. Stir for 2-3 minutes. Add rosemary sprigs, coriander leaves, salt and black pepper powder mix well.

Add the soaked rice and stir gently to coat with spices and herbs. Pour in water, bring to a boil, then lower the heat and cover. Cook until rice is tender and water is absorbed.

Fluff with a fork, garnish with fresh coriander leaves, fried cashews if using and sprinkle of paprika. Serve with zesty lettuce & Ginger crunch salad.
