Steps

Soak poppy seeds in water for 15 minutes.

Grind poppy seeds with green chillies, turmeric, and salt to make a smooth paste.

Heat mustard oil in a pan. Shallow fry the eggplants.

Add eggplant pieces and saute until well fried and browned. Remove them onto a plate. Set aside until use.

Add the poppy seed paste and cook on low heat, stirring gently. Add the eggplants now.

Cover and cook until done and all the flavours are absorbed.

Serve hot with steamed rice.
Tips
For a richer flavor, you can adjust the amount of mustard oil to your preference.
