In a bowl, mix gram flour, rice flour, salt, pepper, and mixed herbs.

Add spring onion and water. Stir to make a smooth batter.

Let the batter rest for 5 to 10 minutes.

Heat a non-stick pan and brush with oil.

Pour a ladle of batter and spread into a thin circle.

Cook on medium heat until golden, then flip and cook the other side.

Serve hot with your preferred chutney.
Tips
For a crispier cheela, ensure the pan is well-heated before pouring the batter.
