Cut chicken into bite-sized pieces. Combine all the ingredients as mentioned and set aside until use.

Heat a tablespoon of oil in a pan or a wok. Add chicken and stir fry until it is cooked and almost browned. Turn off the heat and set it aside.

Add the rest of the oil to the pan. Fry ginger and garlic until fragrant on a low heat. Now add the red paste and let it cook for a minute on a medium high heat. Stir in the brown sugar.

Add the fish sauce, onion, cauliflower florets and the beans. Reduce the heat and let them cook for about 3-4 minutes or just until crisp and firm. It's time to add coconut milk now. Simmer on a low heat only.

Now add the fried chicken to it and mix. Simmer for a minute or two more.

Add fresh basil leaves and garnish with lots of cilantro if desired. Serve it piping hot right away. Enjoy!
Tips
Using homemade curry paste enhances the flavour of the dish. Feel free to adjust the amount of vegetables based on your preferences.
