Steps
- 1
Trim the lemon and pickle it in salt
: Pour water to the point where the lemon is submerged in the bowl. Sprinkle with a spoonful of baking soda for 5-10 minutes, leave to soak, and wash under running water. It can also be flushed with thick salt.
- 2
Clean the glass bottle
: Disinfect the glass bottle evenly in boiling water.
- 3
Slice lemon and remove seeds
: Cut into 0.3–0.5 mm thick slices. The lemon stalk is good for drying and putting it in drinking water to enjoy the scent.
- 4
Weigh the salt and put it in a container
: mix 1/10 of the weight of the trimmed lemon. You can put it in a few times, or you can put it in one at a time.
- 5
Storage
: It tastes fresher if you eat it right away. Usually, the taste oozes and improves in about a week, but if you eat it 2-3 months later, it ferments and you can enjoy the gradually aged taste. It can be stored at room temperature in cold winter. Keep it refrigerated in hot summer.
