It’s Sunday, and this stew is a perfect way to celebrate it.

In a pot, sauté the onions and garlic in olive oil, over medium heat, until soft and fragrant.

Add the cumin, paprika, turmeric, salt, pepper and tomato paste and sauté for another 1-2 minutes.

Add the lentils, tomatoes, bay leaves and chicken stock and bring to a boil.

Once boiling, lower the heat and let it simmer with the lid on for 30-40 minutes, or until the lentils are cooked.

Garnish with a drizzle of olive oil and fresh parsley, and serve with bread. Enjoy!
