Pozole Rojo
Traditional recipe in the Puebla style.
Steps

In a pressure cooker, cook the hominy corn with the pork pieces, bay leaves, garlic cloves, half of the onion (cut into quarters), and salt for 45 minutes.

In another pot, bring the guajillo chiles, ancho chile, arbol chiles, tomatoes, a quarter of the onion, a pinch of oregano, and 2 whole garlic heads to a boil. Once it starts boiling, turn off the heat.

Once the corn and meat are cooked, remove the pork meat, shred it, and return it to the pot.

Blend the boiled ingredients, adding the black peppercorns and whole cloves.

Strain the sauce into the broth, add a bouillon cube, and adjust the salt to taste.

Serve and top with chopped onion, ground oregano, and lime juice as desired.
