Caramel Sabudana Kheer (Tapioca Pearls Pudding For Fasting)

Sabudana Kheer (Sago Kheer) is an Indian dessert made using sago pearls (sabudana, tapioca pearls) and milk. This kheer is popular during the fasting festive season in India. This Indian sago pudding is rich and creamy in texture and comes together in 30 minutes using simple ingredients. It is gluten-free and can be easily made vegan, too.

Sabudana Kheer (Sago Kheer) is an Indian dessert made using sago pearls (sabudana, tapioca pearls) and milk. This kheer is popular during the fasting festive season in India. This Indian sago pudding is rich and creamy in texture and comes together in 30 minutes using simple ingredients. It is gluten-free and can be easily made vegan, too.

Take sabudana, rinse thoroughly and soak in slightly less than 1/2 cup of water for 1 hour.

Heat ghee in a kadhai over medium flame. Then add chopped dry fruits and roast them lightly for 40 seconds, then transfer them to a plate.

In the same kadhai, add raisins and roast for a few seconds, then transfer them to the plate.

Clean the kadhai, pour in 1 liter of milk, and bring it to a boil. After 1 hour, check the soaked sabudana and soak them in hot water for 2 minutes. Drain the excess water using a strainer.

Now add the soaked sabudana into the boiling milk and let it cook.

In a separate pan, spread sugar and cook on medium flame until it starts melting.
Stir with a spatula and continue cooking until the sugar turns golden brown.
Turn off the flame, carefully add 1/4 cup of water, and mix well to make a smooth caramel syrup. - 7
Once the kheer thickens, pour in the caramel syrup, mix well, and cook for 2 minutes.

Then add cardamom powder and the roasted dry fruits, mix well, and cook for another 2 minutes. Turn off the flame and let the Caramel Sabudana Kheer rest for a few minutes. Garnish with roasted dryfruits.
