8 skewers
  • 120 gboneless chicken thigh
  • 8teppogushi bamboo skewers
  • 4negi or spring onions
  • たれ (Tare)
  • 2 tbspsoy sauce
  • 2 tbspmirin
  • 2 tbspsake
  • 1/2 tbspsugar

  1. 1

    Start by soaking the skewers in water for 30 minutes. If you can’t find teppogushi skewers, any bamboo skewers will do.

    In the meantime, separate the negi whites from the green. You can use spring onions too.

    In a pot, add the tare ingredients, as well as some of the spring onion greens, in a pot and bring to a boil.

    Reduce the tare over a simmer until it thickens, about 5 minutes, then strain into a small bowl.

    Cut the spring onion whites into 16 equal pieces. Likewise, cube the chicken into 16 equal pieces.

    Skewer the chicken first, followed by a spring onion white. Alternate and top off with chicken.

    On a medium heat, preheat and oil the grill.

    Add the skewers and cook until it naturally releases from the pan. Flip, and brush a light layer of tare. Continuously flip and brush until fully cooked through, about 8-10 minutes.
