Ingredients

2.5-3 hours
6-7 servings
  • 7–9 lbs Bone-in turkey breast
  • 1 cupBaby carrots
  • 1Apple
  • 1Lemon
  • 1Onion
  • 1bulb Roasted garlic
  • 4 tbsp (1/2 stick)Butter
  • 1 tbspSage (fresh or dried)
  • 1 tbspRosemary (fresh or dried)
  • 1 tbspThyme (fresh or dried)
  • 1 tspSalt
  • 1/2 tspBlack pepper

Steps

2.5-3 hours
  1. 1

    Preheat oven to 350°F.

  2. 2

    Prepare compound butter (see recipe below).

  3. 3

    Carefully loosen the skin on top of the turkey breast and spread compound butter under the skin and over the surface.

  4. 4

    Cut apple, lemon, and onion into wedges. Stuff the cavity with carrots, apple, lemon, and onion.

  5. 5

    Place extra carrots, onions & apple around the turkey in the pan.

  6. 6

    Roast for 2.5–3 hours, basting with pan juices every 30 minutes, until internal temperature reaches 165°F.

Tips

For compound butter, mix roasted garlic, butter, sage, rosemary, thyme, salt, and pepper until well combined.
