Ingredients

30-35 minutes
4-5 servings
  1. 1/2 kg carrot
  2. 1/ 4 tbsp ghee / clarified butter
  3. 15-20mix dry fruits cashew, almond, pistachio chopped (Roasted)
  4. 1 1/2 cupmilk
  5. 3/4 cupsugar (to taste)
  6. 2 cupkhoya / mawa (required)
  7. 1/4 tspcardamom powder

Steps

30-35 minutes
  1. 1

    Firstly, peel the skin of carrot and grate finely. keep aside. traditionally, delhi carrot is used to prepare halwa.

    In a large kadai heat ¼ cup ghee and fry cashew, almonds.
    fry until it turns golden brown. keep aside.

    In the same ghee add grated carrot and saute well.Saute for 10 minutes or until it changes colour slightly.Now pour 1½ cup milk and give a good stir.
    boil for 10 minutes stirring occasionally.

    Continue to boil until the carrots are cooked well and milk reduces.Once the milk thickens completely, add ¾ cup sugar.Mix well and cook until the sugar dissolves and thickens.Cook until the halwa thickens and ghee releases from sides

    Now turn off the flame and khoya, ¼ tsp cardamom powder and fried nuts.Mix well

    Finally, enjoy gajar ka halwa or carrot halwa chilled or warm.

Tips

"I prefer more Mawa in Ganja Halwa, so I added two cups. You can adjust according to your taste."
You can also add Milkmaid to Gajar Halwa for extra sweetness and richness.
