My (Weird) and Delicious Chili!

This chili turns out so delicious and I concocted this recipe quite by accident. We love chili in our family. It’s a great way to get your protein and fiber in, in a delicious way.
So one day as I was making chili, I went to grab my Mexican fiesta seasoning blend but instead, I didn’t realize I had grabbed my mango curry powder and I added a good dose of it.
As I was cooking, I started to smell the chili and it seemed a little different, but the smell was quite enticing. So I went to check my spice rack and I saw that my Mexican fiesta spice jar was untouched and my curry powder jar was open. It was too late to do anything about it so I added the Mexican fiesta spice blend and I also added some mangoes. And I added a little bit of cocoa powder and the result is a big pot of deliciousness!

Heat the oil and add the onions and bell peppers, salt, garlic, and saute for one to two minutes on medium heat.

Add the cumin powder, curry powder, Mexican fiesta powder, and sauté for 30 seconds. Next add the canned diced tomatoes and the tomato paste. Saute for one minute on medium.

Next add the ground beef. Break it up into pieces and sauté on medium heat for 1 to 2 minutes.

Add some mango pieces. Cover and cook so the spices and the mango all gets blended in.

Now open the lid and add the beans. Next add the cocoa powder. Add some water or broth I added two 15 ounce cans of water. Cover and simmer on low for 5-10 minutes.

Taste, adjust seasonings and top with guacamole, sour cream, jalapeño, and shredded cheese. Enjoy! 😊
