Preheat oven to 350°F or 180°C

Mix the dry ingredients together. Sift the flour and cocoa powder

Add the instant coffee to boiling water and dissolve in a cup.

In a big bowl add the eggs, and sugar and beat well with a whisk.

To this egg and sugar mixture, add the milk, coffee mixed in boiling water, vanilla, oil and mix well. Use a hand blender for fast results.

Add the dry ingredients in batches to the wet batter and either mix with hand blender or by hand using a spatula.

Line an 8 inch round baking pan with parchment paper, add the batter, and bake at 350°F for 40-45minutes till a toothpick inserted comes out clean.

While the cake is baking, prepared the frosting. In a pot add the heavy whipping cream, the chocolate chips, the icing sugar and the vanilla. Keep the heat on low and stir gently till the chocolate chips melt and you get a smooth chocolate mixture. Leave it out to cool. This is your creamy delicious frosting!

Cool the cake completely on a wire rack. Once it’s cool, you can cut it horizontally to create two layers. Frost with the chocolate icing one layer of the cake. Then top with the other half and frost the top and sides. Now enjoy!
