Preheat oven to 350°F. Line a pan with oven-safe parchment paper, lightly spritzing with non-stick spray. Set out shredded cheese and milk to reach room temperature. If frozen, place pork chorizo in the refrigerator to thaw.

In a frying pan, cook the chorizo until cooked through.

In a large mixing bowl, add the pork chorizo, Bisquick mix, shredded cheese, milk, and Italian seasoning. Using a large spoon, stir until everything is very well combined. Adjust Bisquick-to-milk ratio if and as needed.

Once fully combined, spoon out the meat mixture and roll into small balls, creating twenty-four balls.
