Preheat oven to 350

Line a baking sheet with parchment paper.

Separate bacon into a single layer on the sheet.

Bake bacon for 20 minutes or until bacon is well done and crispy.

In a blender, crack eggs, add cream and cream cheese. Blend until smooth and frothy.

Optional - chop onion

Remove bacon from the oven and put strips on a paper towel.

Use a separate paper towel or brush dipped in the bacon fat or butter to grease a 9x9 casserole dish

Spread crumbled bacon, 1 cup of shredded cheese and optional onions on the bottom of the dish.

Pour egg mixture into dish.

Top with remaining cheese

Cover with foil and bake in 350 degree oven for 30 minutes

Remove foil and continue baking for an additional 5 - 10 minutes or until the center is firm and the top is lightly browned.
Tips
ALTERNATIVELY: For egg bites, grease a nonstick or silicone muffin pan, add ingredients to each cup and bake for 10 to 15 minutes or until lightly golden brown.
