Cook bacon in a large Dutch oven over medium heat until starting to crisp.

Add celery, onion, bell pepper, thyme, garlic, and cayenne, along with 1 tsp each salt and pepper. Cook until onion is tender, 8-10 mins, stirring occasionally.

Add black eyed peas, ham, and hominy, along with 1/2 c chicken bone broth. Cover and simmer over low heat for at least 30 mins (I go with the full 45-60 mins it takes for the brown rice)

In a separate deep skillet, add 2 tbsp olive oil over med-high heat. Add the rice and toast until golden brown, about 3 mins. Add 2 c bone broth (or whatever amount the rice quantity calls for on the package). Bring to boil, then reduce heat to low and cover. Cook until all liquid is absorbed, about 45 mins (again, check package directions).

Add the cooked rice to the Dutch oven along with the vinegar and butter. Stir until well mixed. If the texture is dry, add additional bone broth 1/4 c at a time until desired consistency. Season with green onions and additional cayenne for more heat, if desired. Enjoy!
