Ingredients

45–60 minutes
2–3 people
  • 1whole fresh fish (sea bream, sardine, or similar)
  • 3potatoes, sliced
  • 1 cupcherry tomatoes
  • 1red pepper, chopped
  • 1green chili pepper (optional)
  • 3 clovesgarlic, minced
  • 3 tbspolive oil
  • 1 tspsalt
  • 1 tspblack pepper
  • 1 tsppaprika
  • 1 tspcumin
  • 1 tbspchopped parsley and cilantro
  • Juice of half a lemon

Steps

45–60 minutes
  1. 1

    Preheat the oven to 180°C.

  2. 2

    In a bowl, mix olive oil, garlic, spices, herbs, and lemon juice.

  3. 3

    Coat the fish well with the marinade inside and outside.

  4. 4

    Arrange sliced potatoes in a baking dish. Add chopped peppers and cherry tomatoes.

  5. 5

    Place the fish on top of the vegetables.

  6. 6

    Pour the remaining marinade over everything.

  7. 7

    Bake in the oven for 40–50 minutes until the fish is tender and the vegetables are cooked.

Tips

✔ Use fresh fish for the best flavor.
✔ Add olives or preserved lemon for a traditional Moroccan taste.
✔ Serve with fresh bread and a simple salad.
✔ Let the dish rest for 5 minutes before serving.
