Wash and Soak rice and Dal overnight or at least 4 hours. Then grind it smooth using just enough water required for grinding.

In a roti pan heat up oil. Sauté onions for a few seconds. When the they start to get translucent, add the rest of the veggies, salt and chilli paste. Sauté for a minute or two or until the veggies look tender. Add them to the mung Dal batter. Add coriendar leaves and the other spices if you wish to. Adjust salt if needed. The batter should be spreadable, not too thick nor too thin

In the same roti pan heat up oil. Pour a ladle ful of batter and spread a bit. Cook it on medium flame until the top dries out. Then flip and cook the other side. When both the sides are nice and golden, remove it from the pan.

Serve them with green chutney or curd.
