Paneer or Cottage Cheese Spring Rolls along with a few delicious mixed Vegetables are deep fried bundles of joy perfect for a yummy snack at Tea-time or Shaam ki Chai. A perfect evening snack for a perfect idea of relaxation.
These Spring Rolls are loaded with healthy Vegetables and Cottage Cheese. You will love these amazing goodies that are easy and quick to make in just a few minutes. I have used readymade sheets for these but they can be made very easily even at home.
The choice of spices is totally your own. And you can use your favourite Vegetables as well.
With Paneer added, it becomes an excellent source of Protein too. And if baked or done in an Air Fryer, these can be absolutely healthy too.
A perfect snack for any day and a must at Tea-time. They make a great combo with Tea or Coffee. And also a lovely option for Ramadan at Iftaar. Let's get started then.

Keep all the ingredients ready and handy. Chop all the vegetables of your choice either in a manual chopper or a food processor whichever is convenient.

Heat a tablespoon of butter in a pan. Saute garlic and ginger at first followed by the chopped veggies and a few basic spices as mentioned. Saute until done and the raw smell fades away. Add crushed paneer or cottage cheese now. Top with freshly chopped coriander too for a refreshing taste and flavour. Mix lightly and set aside to cool a bit before making the spring rolls.

Place a tablespoon of this filling on the wrapper at one end and fold it from both the sides, roll it until the edge and then finally seal it with a little flour paste. (For the flour paste, mix water and flour to a thick paste)

Deep fry all on a high heat for 2 minutes turning them well. Each batch is done is 2-3 minutes. As these sheets are thin, these are done so very quickly.

Serve these delicious and beautiful looking spring rolls with any dip of your choice. I served these alongside Momos Chutney. Enjoy!
