Golden Rice Croquettes with Sauce

Cook the rice in salted water, then drain and let it cool.
Finely chop the raw chicken breast.
In a large bowl, combine the cooled rice, chopped raw chicken, chopped onion, crushed garlic, parsley, egg, margarine, and all the spices (paprika, black pepper, salt, cinnamon, ground coriander, cumin).
Mix well until the mixture is uniform. - 2
Shape the mixture into sticks.
Coat them with breadcrumbs.
Fry them in hot oil until golden brown and the chicken is cooked through.
Drain on paper towels. - 3
To make the sauce: In a saucepan, sauté the chopped onion and garlic in a little oil. Add the grated or finely diced tomato and tomato paste. Season with the same spices. Pour in 2 cups of water and let simmer for a few minutes. Strain the sauce to get a smoother texture.

Arrange the fried sticks in a baking dish. Pour the sauce over them.
Bake at 340°F (170°C) for 10 minutes to let the flavors blend.
