My friend loves berries, so I made her this berry cake for her birthday, filled with creamy cheese and berries 🫐🍓

Start by preparing the cake, then put it in the oven to bake

While baking the cake heat the frozen berries in a pan, then add a little sugar and a squeeze of lemon juice🍓

Once they melt, start gently mashing them until they turn into a jam-like texture. Then stir with a spatula and let it cool slightly while the excess liquid reduces

Once the mixture and the cake have both cooled, slice the cake into layers so we can start filling and decorating it.

First, soak the cake with berry juice if available — if not, milk works fine. Then spread a light layer of cream cheese and add a little of the berry mixture in the center, keeping it away from the edges

Spread cream along the edges to prevent the filling from spilling out

Then I made buttercream for decorating since it’s easy to use and cover the cake. It’s made with butter, sweetened milk, and vanilla, whipped for 8 minutes until it becomes fluffy and creamy

I just decorated it with what I had, no specific design in mind, and that’s it — simple and swee 🤍🤍
