Ingredients

  • 3/4 cupunsweetened canned coconut milk
  • 1 inchpiece of ginger, peeled and minced
  • 2garlic cloves, minced
  • 1/2 teaspoonturmeric
  • 1/2 teaspoonred pepper flakes
  • 4, 6 ounce tilapia fillets
  • 4 cupsgrape tomatoes, sliced in half
  • 1/2yellow bell pepper, diced
  • 3 tablespoonsolive oil
  • 1 tablespoonhoney
  • Salt
  • 2limes
  • 1/2 cupcilantro

Steps

    Mix the coconut milk, ginger, garlic, spices, salt, and honey

  2. 2

    Zest and juice 1 lime into the coconut milk mix. Add 1/4 cup chopped cilantro and marinate the fish in this for 15-30 min

  3. 3

    Heat oven to 425. Place the tomatoes and bell pepper on a sheet pan and drizzle with 2 tablespoons olive oil. Roast in the oven for 10 minutes.

    Place the fish after marinating on the baking sheet but not on top of the veggies. Add the marinade over the fish. Drizzle 1 tablespoon of olive oil on the fish. Roast for 10 minutes, until fish is opaque.

  5. 5

    Remove the fish from the oven and change to broil. Place the sheet pan on the top shelf close to the broiler and finish cooking 4-6 min. Tomatoes should be browned in spots.

  6. 6

    Garnish with remaining cilantro. Serve with lime wedges
