I have created this recipe from my dear friend madhumita … thank you so much for all of your recipes and the love you spread around. Of course you know it’s not the aubergine but a nice choice!

Cut and peel onion and skin potato. Set aside (you can put you potato in water so it doesn’t discolor). Take the coconut,mustard seeds, salt and chili peppers and grind them into a paste. Add 1tbsp oil. set aside.

Mix the flours with sesame seeds, salt and water and mix into a batter.

Take the onion and cut carefully through the center but not all the way in half. Add the coconut mixture into the pocket you have made. Add the oil to a frying pan and on a medium heat. Dip the onion into the batter and when hot enough (if a drop of water sizzles your ready) add it to the pan and do the same with your potato. If your potato is more than 2 inches long cut in half and then make a cut to make each half 1 inch. Same thing with the onion.

Fry them until each side is golden brown. Browning too fast will cause the onion and potato not to be cooked all the way through. We want a slow browning not a fast. I hope you love this as much as I do 💜 Enjoy the moment and seize it !
Tips
When putting the slice through your vegetable make sure each half is about an inch. Even sides makes even cooking. I made a few homemade potato chips for garnishing .
