Muraru, Mchare, Mshale, or Mlale are wild bananas (diploid [AA]). A sturdy variety that stays green even when fully ripe. They are prized by the people of Northern Tanzanian highlands (Kilimanjaro/Arusha), their neighbouring countries including DR Congo, and parts of Kenya.

  • 8 cupswater
  • 15heaped tablespoons of millet or sorghum flour
  • Sugar to taste

    In a medium pot, pour in 5 cups of water and heat it until it’s nearly boiling: hot but not bubbling yet.

    In a small jug or bowl, combine the flour and the remaining 3 cups of water. Mix well until smooth. No lumps allowed!

    Turn the heat down and let the porridge simmer gently for 10 minutes. Stir in sugar.

  5. 5

    Allow the porridge to simmer covered, for another 10 minutes on the lowest heat to ensure it cooks through. stirring every so often to avoid sticking. If it's too thick add a little hot water to help the cooking process.

  6. 6

    Serve warm and add a banana for an extra nutritional boost. This is how the Muraru banana looks before peeling.
