I have lived in Asia for a long time and of course rice is important Thais say "kin Cow" means to go eat but literally mean - Eat Rice :P I aways frustrated that I could not get Indian Rice "just right" until I learn - of course from an indian mum that looked at me like I was stupid lol - that you Mums are the best.

Put rice in sieve and wash under running water until water runs clear

Put rice into a pan cover with water and let soak for 20 mins (NOT more than 30)

Drain the rice and return to pan (must have a lid) add the water, salt and butter and heat until rolling boil then reduce to LOWEST heat and cover with lid. Cook for 10 mins. DO NOT LIFT THE LID EVER !!!!!!!!!!!

Remove pan from heat and keep covered for another 10 mins DO NOT LiFT THE LID :P

Now open the lid there will be a little steam. Add anything you want...... and "fluff up" with a fork. Add peas serve in a warmed bowl and enjoy - truly perfect :P ENJOY :P
