The Best Sausage, Egg & Cheese Muffins

I have 2 toddlers who refuse to eat eggs. My husband and I love eggs and meat in our breakfast. My husband and I (and the kids) have a lot going on throughout the week so we needed something that was able to get popped in the microwave and head out the door with for easy eating on the go. Well I made these and my kids LOVE them and even ask for them on a daily basis! They are delicious, hearty and have just the right amount of sweetness for kids to love them just as much as adults!
The Best Sausage, Egg & Cheese Muffins

Well I made these and my kids LOVE them and even ask for them on a daily basis! They are delicious, hearty and have just the right amount of sweetness for kids to love them just as much as adults!

Preheat oven to 350 degrees

Put olive oil in pan and start to cook sausage in skillet, then add onion and mushrooms, blackberry jam and seasonings until fully cooked (about 10-12 minutes)

While the sausage is cooking spray 12 count muffin pan with cooking spray.

Whisk eggs in bowl and add 1 cup cheese and bacon bits.

Drain grease from sausage mixture then add sausage to bowl with eggs and cheese and mix well.

Use a ladle to add egg and sausage mix to muffin pan. (About 3/4 full in each cup) then top with remaining cheese.

Bake in oven on 350 for 20-25 minutes until golden and slightly browned.
