Heat 1 tsp oil in a pan on medium heat.
Add cumin seeds, mustard seeds, and sesame seeds. Let them crackle for a few seconds.
Add ginger garlic paste and green chilli paste. Sauté well until aromatic.
Pour in water and add black pepper powder, paprika powder, coriander & cumin powder, and salt. Mix well. - 2
Once the water starts boiling, slowly add the semolina while stirring continuously to prevent lumps from forming.
Cook and mix until the semolina absorbs all the water and becomes thick.Turn off the heat and let the mixture cool slightly.
Add mashed boiled potatoes, bread crumbs, rice flour, and fresh coriander leaves. Mix everything well to form a soft dough. - 3
Shape the mixture into small rollers.Heat oil for deep frying and fry the rollers on medium heat until golden brown and crispy.
Remove onto tissue paper and serve hot with ketchup or chutney.
Tips
For best shape and extra crispiness, keep the prepared rollers in the refrigerator for 30 minutes before deep frying.
