Steps
- 1
In a slow cooker, add the chicken, broth, half and half, cream cheese, salt, pepper, Italian seasoning, onion powder, and garlic.
- 2
Close the crockpot and cook on High for about 2 hours, or until the chicken reaches an internal temperature of 165°F.
(Note: The sauce may look separated before stirring — this is normal.) - 3
Remove the chicken from the crockpot and cut into small chunks, thin strips, or shred it. Return the chicken to the crockpot.
- 4
Add 1 pound of dry pasta (such as fettuccine or penne).
- 5
Add Parmesan cheese — ¼ cup if using powdered, or ½ to ¾ cup if using shredded. Stir gently to combine.
Cook on High for 30–60 minutes (time varies by pasta type and brand).
Check at 25 minutes and stir every 10 minutes until the pasta is al dente.
If the mixture becomes too thick, add additional broth or cream in ¼‑cup increments to thin it. - 6
Serve with additional parmesan, cracked pepper and fresh parsley.
