Little Millet ( Kutki or Sama) is one of the smallest millets but one of the most powerful in terms of health benefits.It is rich in dietary fiber , vitamins, minerals and antioxidants which support digestion, boosts immunity and promotes overall health benefits. It is also low in fat and calories making it ideal for weight management and promotes healthy lifestyle. It is often used as a healthy substitute for rice and wheat.It can be cooked like rice, can be cooked with milk to make delicious kheer, boiled with legumes for khichdi,pongal, healthy kababs or cutlets with vegetables , pulao or upma.
Little Millet Kabab or Cutlets are crispy from outside while soft inside.These are nutritious and gluten-free patties made by combining cooked little millet, mashed potatoes or paneer and finely chopped vegetables. They are lightly spiced and pan-fried with minimal oil and perfectly served with coriander mint chutney or tomato ketchup as a side in lunch, as a tea time snack, party snacks or packed in kid's tiffin box.

Ingredients

Prep Time : 20 minutes Cook Time: 30 minutes

  • 100 gmsLittle Millet
  • 2 cupswater
  • 1medium onion chopped finely
  • 3 clovesgarlic minced
  • 1 inchginger grated
  • 2green chillies chopped finely
  • 1carrot grated
  • 1/2capsicum chopped finely
  • 2 tbspgreen peas boiled
  • 2potatoes boiled and mashed / grated
  • 2 tbspfresh breadcrumbs (for binding)
  • 1 tspginger garlic paste
  • 1 tbspcoriander chopped finely
  • 1/2 tspsalt or as needed
  • 1/2 tspsugar
  • 1/2 tspcumin seeds
  • 1/4 tspturmeric powder
  • 1/2 tspred chilli powder
  • 1/4 tspred chilli flakes
  • 1/4 tsproasted cumin powder
  • 1/2 tspchaat masala
  • 1/4 tspgaram masala powder
  • 2 tbspoil
  • 2 tspghee

Steps

Prep Time : 20 minutes Cook Time: 30 minutes

    Wash little millet 3-4 times. drain water.soak millets for 1 hour or more in warm water.strain and pressure cook upto 3 whistles on high flame with 2 cups water adding 1 tsp ghee.let it cool. once millets are cooked, fluff it with a fork and set aside.

    Meanwhile boil potatoes. peel and mash or grate them to get a lump free texture.now grate ginger and mince garlic.chop onion and green chillies. remove the cooked millet in a mixing bowl.add boiled and mashed potatoes, peas and rest of the chopped vegetables,dry masalas.add fresh bread crumbs for binding,salt and little sugar to taste, ginger garlic paste, lemon juice,chaat masala, chopped coriander and mash well to combine all.

    Add garam masala powder and sprinkle cumin seeds.drizzle 1 tsp ghee and make a smooth lump free dough.smear oil on both palms and divide mixture into equal sized balls. flatten and shape into kebabs or patties. refrigerate these patties for half hour.heat oil in a grill pan and shallow fry the patties in low to medium flame until both sides are golden brown and crispy outside.

    Serve hot with salad and tomato ketchup or mint coriander chutney and relish!

Tips

If making this recipe while observing fast, omit garlic, onion and bread crumbs. Replace bread crumbs with millet flour for binding.Instead of potatoes, raw banana or sweet potato may be used.Little millet can be boiled in advance and refrigerated. Make cutlets or other recipes with it as and when needed.
