  1. 9Eggs
  2. 1/2 CupCream
  3. 1Red Onion
  4. 1Bell Pepper
  5. 1Tomato
  6. 2 ClovesGarlic
  7. Handful 1Parsley fresh
  8. 1 TeaspoonSalt
  9. 1/2 TeaspoonPepper
  10. Oil
  11. 1Carrot , shredded
  12. 1/2 CupCheddar cheese , shredded

  1. 1

    Preheat oven to 350F. Chop all veggies (shred carrot) and saute until tender in oil of choice (I use coconut). Set aside to cool a bit.

  2. 2

    Whisk together eggs, salt, pepper, cream, and cheese. Stir in cooled veggies.

  3. 3

    Generously oil a round baking dish and pour in egg and veggie mixture. Bake 20-30 minutes, until set in the center. Allow the frittata to cool at least 5 minutes, and serve.
