Chocolate Sugar Cookies

These cookies have a soft, cake like texture and although the name says sugar cookies, it's not very sweet at all. I am not a big fan of sweet cookies so these were perfect for my house. Most sugar cookies are usually decorated but I skipped this step as I don't like sweet cookies.This recipe was adapted from http://www.joyofbaking.com/ChocolateSugarCookie.html I changed the quantities of some of the ingredients and changed the baking time as my first batch came out too hard (over baked.)

  • 2.75 CupsAll Purpose Flour
  • 1/2 TeaspoonSalt
  • 1 TeaspoonBaking Powder
  • 3/4 CupCocoa Unsweetened
  • 1 CupUnsalted Butter
  • 1.75 CupsSugar
  • 2Eggs
  • 2.5 TeaspoonsVanilla Extract Pure

    In a bowl whisk together the flour, salt, baking powder and cocoa powder. Once done set it aside.

  2. 2

    In a separate bowl, using a mixer, cream the butter till light and fluffy and then add the sugar and keep beating till the mixture is light and fluffy.

    Add the vanilla and mix.

  4. 4

    Add one egg at a time and mix.

  5. 5

    Add the flour mixture little at a time and beat until a smooth dough is formed. The dough may look dry but it will come together as you keep mixing.

  6. 6

    Once done, separate the dough into 2 equal portions, wrap in foil/plastic wrap and put in the fridge for about an hour or till it's firm enough to be rolled out. Not too soft.

  7. 7

    Take one portion of the dough from the fridge after an hour has passed, roll it out and cut into shapes as desired with a cookie cutter.

  8. 8

    Preheat oven to 300F and bake for 8-9 mins.

  9. 9

    Tip: When the cookies are done and cooled the texture should be soft and chewy. It would taste like a cake cookie. If the cookie has a hard texture that means it has been over baked. The portions in this recipe made about 80 single cookies.
