i used enough oil to coat the leaves, and perfume it with garlic and chili flakes, all of which contains calories and fat while maintaining full and good flavor. i love cooking spinach coz it cooks split-second fast.

Ingredients

  1. 20 ozbaby spinach leaves, cleaned
  2. 2 tbspextra virgin olive oil
  3. 6 clovegarlic, thinly sliced
  4. 1/4 tspcrushed red pepper flakes
  5. 1salt and freshly ground black pepper
  6. 1/2lemon

Cooking Instructions

    Toss the spinach in a large bowl with the cornstarch and set aside. Heat the garlic and oil in a medium frying pan over medium heat. Saute for few minutes (2 minutes) until the garlic is softened, deep golden brown. Add the pepper flakes and cook for 30 seconds.

    Add the spinach to the pan and cook for 3 minutes until tender. Season.with salt and pepper.

    Place in a serving dish, drizzle the lemon juice and the rest of the oil in the pan all over the spinach. Serve, share and enjoy!

A favorite side dish. I omit cornstarch and lemon juice but top off the cooked spinach with feta cheese. Awesome.
