Banana, date and walnut loaf

This clearly has to be a post that has taken a couple of hours to type as I had to go between the laptop to a 2.5 week old baby! Now that she is taking a nap, I typed out this recipe in lightening speed :). K bought loads of bananas and a few of them were ready to be used in a recipe, so I decided to make this quick and easy recipe. Goes perfect with tea time. Hope you get to try it sometime! :)

Ingredients

  • 100 gmButter -
  • 100 gmCaster Sugar -
  • 2Eggs -
  • 1 cupSelf-raising flour -
  • 2Bananas - mashed
  • 100 gmDates -
  • 50 gmWalnuts - , roughly chopped
  • 1 tspBaking powder -
  • 180 CPreheat your oven to

Steps

    Start by mashing the bananas

  2. 2

    Also roughly chop the walnuts and dates and set aside

  3. 3

    In a bowl, beat the butter and sugar until light and fluffy

  4. 4

    Next add the eggs one at a time and slowly pour in the flour

  5. 5

    To this mixture, add the mashed bananas, dates, the nuts and the baking powder

  6. 6

    Spoon the mixture into a loaf pan and bake for an hour or until the loaf has risen and is firm to the touch

  7. 7

    Pull out of the oven once fully baked and allow it to cool before cutting it in slices

  8. 8

    Spread some butter and serve!
