Sesame Soba Noodles

I was introduced to Soba Noodles a few years ago, and it has only been recently when I grabbed a packet of Soba from the supermarket to make something at home. I think the attraction was that it said 98% fat free on the packaging LOL. For someone who has been doing a lot of Vegan at home lately, hello! everything that is lower in calories must be bought!
I made this dish during a very full on week. I just did not have the time to get into a huge recipe idea and this was just perfect. If you are a big fan of 2 min instant noodles, you so should throw that in the bin and replace it with this. I know I always say that my recipe idea was a hit with the husband and the kid, but guess what they both loved it. My daughter thought the noodles were a lot of fun, I had no intention of serving this to her but she found this much more fascinating to eat than her dinner

Cook the noodles according to the instructions on the packet in some boiling water

They cook quite fast, so you wouldn't want to walk away to do something else

Once done, rinse it with some cold water, drain and set aside

While the noodles was cooking, I whisked together the rice wine vinegar, soy sauce, sesame oil, sugar, garlic and ginger

Chop the spring onion and cilantro and set aside
- 6
The last step is to take a large bowl and combine the noodles along with the liquid mixture, and add the cilantro and spring onion and sesame seeds

Cut the hard boiled eggs lengthwise and add it to the noodles
- 8
Serve immediately!
