Time to pull out a recipe from the drafts section. I made this back in May and took a picture for the blog, but never blogged about because I got just so engrossed in my Vegan/Gluten Free meals ... now that it is Friday here in New Zealand when this post is published, why not end it up a yummy meal idea. Nachos! It's simple that a non-chefy type can make this. It's easy to put together without a lot of time, so its the meal for a Friday night when all you want to do is watch a movie or sports on TV, nachos is just perfect and everyone will love it! If you are not a meat eater, I am sure a meat substitute will work fine!

Ingredients

  1. 500 gmsGround Beef :
  2. 1Onion : chopped
  3. 2 tbspsTaco Seasoning :
  4. oneSalsa : Store bought , we get the medium hot
  5. to tasteSalt Pepper &
  6. twoSour Cream : a dollop or
  7. handfulCilantro Spring Onion & : A chopped for garnish
  8. Cheese Grated : a generous amount
  9. Corn chips : a generous amount
  10. 1 tinRefried Beans :
  11. Oil

Steps

    To some heated oil, add the onions and saute until translucent. Next add the ground beef, the taco seasoning, some salt and pepper and cook on medium-low heat until the beef is well cooked. I didn't include refried beans when I made this for the blog, if you want to, add a tin of refried beans to the beef and stir well to combine

    If avocados are in season, I suggest making some guacomole. If you aren't going to use its fine too

  3. 3

    Once the beef is done its time to plate! First put a nice layer of corn chips on the plate. Next goes the mince beef, followed by the salsa (and gucamole). Then the shredded cheese. Finally the dollop of sour cream and the coriander and cilantro for garnish

    This is a sure to please meal especially if you have fussy eaters at home
