Ingredients

  1. 1 CupQuinoa , rinsed very well
  2. 2 TablespoonsLemon Juice Fresh
  3. 1 CloveGarlic , minced
  4. 1Cucumber , diced and seeded
  5. 1 PintCherry Grape Tomatoes or , diced
  6. 1/2 CupExtra Virgin Olive Oil
  7. 1/2 CupParsley Mint and / or
  8. To TasteSalt
  9. To TastePepper

  1. 1

    Add quinoa, 1/2 tsp. salt, and 1 1/4 cups water to a saucepan and bring to a boil over high heat. Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 10 minutes. Remove from heat and let stand, covered, for 5 minutes.

    Meanwhile, whisk lemon juice and garlic in a small bowl. Gradually whisk in olive oil. Season dressing to taste with salt and pepper.

  3. 3

    Add cucumber, tomatoes and herbs to the bowl along with the quinoa. Toss to coat. Season to taste with salt and pepper.
