Super easy gajar ka halwa without any khoya ( this is a relatively skinny version of the decadent dessert!)
Cooking Instructions

In a non stick pan heat the ghee/oil. Add the carrots and stir and cook it for about 5 minutes on medium heat till the raw smell vanishes. Add the milk and cream. Stir, cover and cook for 15 minutes on low heat.

The carrot should be cooked and there should be a considerable amount of liquid after you remove the cover. Cook the carrots on high heat till the milk completely evaporates.

Add the sugar and cardamom and stir till oil starts to separate. Lower heat add the nuts and cook for another 2 minutes before taking it off the heat. Microwave the halwa before serving, tastes super yumm that way!

I like my sweets not too sweet, you might want to add another tablesppon of sugar to the halwa. You may also substitute sugar with condensed milk if you want the halwa to be more rich and decadent!
