I had an impression that Brinjal is tricky to cook, at times it gets over cooked and the whole dish becomes a mess. So I never tried any thing else than fried Brinjal gravy and normal Brinjal fry.Once I was left with lot of Brinjal with which I dont want to make a fry or a gravy. I just want to cook one pot dish. Okay, lets do Brinjal Biryani however I promised myself that I will not make a mess. With all care I cooked the brinjal, added all the ingredients and closed the lid. Once done, I opened it and the brinjal was cooked well with all the masala in, oh! still in shape. Being a veggie, this swtiched us from a normal veg biryani.

Ingredients

  • 1.5 CupsRice
  • 1Onion
  • 2Green Chillies
  • 2Tomatoes
  • 6Brinjal
  • Coriander leaves Few
  • 1 TeaspoonGinger Garlic paste
  • 1 TeaspoonJeera powder
  • 1 TeaspoonCoriander powder
  • 1/2 TeaspoonTurmeric powder
  • 2 TeaspoonsMasala Biryani powder
  • To TasteSalt
  • Oil Some

Steps

  1. 1

    Cut the vegetables - Onions, chillies and brinjal into long planks. Finely, chop the tomatoes.

  2. 2

    In a presusre cooker heat add oil. Add onions, chillies followed by Ginger garlic paste. Saute for few minutes.

  3. 3

    Add chopped tomatoes, once cooked add brinjal and start adding the "MASALA".

  4. 4

    "MASALA" - 1 tsp of jeera powder and coriander powder. 1/2 tsp turmeric powder and 2 tsp of briyani masala. Add salt to taste.

  5. 5

    Add rice along with water and close the lid. After 3 whistle, open and transfer to a serving bowl garnish with coriander leaves.
