  • 2 Poundssugar powdered
  • 1peanut butter
  • 1 Teaspoonvanilla extract

  1. 1

    Boil 1 medium sized potato until a fork stuck in middle goes in easy. Potato should be very soft. Let chill in fridge at least one hour. Remove skin and mash in a bowl. Begin adding powdered sugar and mixing with potato. Add vanilla extract before mixture gets thick.

  2. 2

    Continue adding sugar and mixing until it is thick enough to spread and roll out with a rolling pin. Should be about as thick as making a pie crust.

    Spread potato mixture out on wax paper using powdered sugar to help ease of rolling out. Roll to about 1/4 inch thickness or less.

    Spread peanut butter over potato mixture to about 1/8 inch from all edges. Begin to roll up into a log.

  5. 5

    Wrap rolled log in wax paper and put in fridge to chill. At least one hour (longer is better)

  6. 6

    Cut into little "wheels", and enjoy!
