
Pop’s Banana Nut Bread
Based on a recipe for muffins my dad created.

Preheat oven to 350 F. Butter/grease loaf pan.

In medium bowl, beat one egg and set aside.

In another medium bowl, sift 2 cups flour, 2 tsp baking powder, 1 tsp salt, 1 Tbsp cinnamon, and 1/4 tsp nutmeg. Stir to combine. To flour mixture, add 1 cup fine dice banana and 1/2 cup chopped pecans. Stir until well combined.

To beaten egg, add 1/2 cup sugar and 1/2 cup brown sugar. Stir until well combined. Add 1/3 cup oil, 1 cup milk, and 1 tsp vanilla. Stir until well combined.

Add wet mixture to dry mixture and stir to combine. Pour mixture into greased loaf pan. Bake at 350 F for approximately 35-40 minutes.
Tips
I often use almond milk or yogurt whey in place of milk with good results.
I like to toast the pecans with butter and salt prior to chopping, but it is not required.
For a healthier option, I will sub 1 cup quick oats for one cup flour and increase the baking powder to two heaping teaspoons. One can substitute applesauce for the oil. One can also substitute granular monk fruit for the sugar, and brown sugar substitute for the brown sugar.
Pack the small dice banana into the measuring cup.
