Ingredients

  • 1 BunchDandelions water rinsed in cold .
  • 1carrot medium size diced into small pieces
  • 1 lbPasta Linguinne .
  • 2 TeaspoonsSalt
  • 1/2 TeaspoonBlack Pepper Cracked
  • 1 TeaspoonMasala Vegetable
  • 1/2onion medium chopped fine
  • 1/2 Teaspooncumin seeds
  • 6 ClovesGarlic Fresh Mashed
  • 2Olive Oil Table spoon
  • 2 QuartsWater
  • 2cheese Table spoon Peccorino grated
  • 1tomato Medium Size chopped
  • 1 teaspoonTamarind Paste .

    Use a large Pot and Boil water. add 1/2 teaspoon salt.

    Cut 1/2" stems of Dandelions. Cut into 1/2 all the stems and leaves. Add to boiling water. Bring to a boil and let it simmer for 15 minutes. Drain and save the Water. Put boiled dundelions aside.  Boil diced carrots for 3 minutes in salt water.

    In a seperate Pan add 1 tablespoon olive oil. Add cumin seeds, cook 1 minute, add all the garlic, onions, add vegetable masala and boiled carrots. Cook 2 minutes. Now add boiled dandelions, add 1/2 teaspoon salt, (1 chopped green chilli), chopped tomato and simmer for 10 mts. covered.

    Bring dandelion water to a  boil in the same pot, add 1 teaspoon water and 1 lb. of Linguinne Pasta, boil it for 7 minutes. Drain Pasta and Add it to the Dandelions. Add 1 tablespoon of olive oil. Mix it well and serve with Grated cheese on top.

Indian food and spices are not only tasty and flavorful; they also add a lot of benefits to our health. I have tried to take advantage of herbs and spices and infuse the American and Italian lcuisine. It is sort of East meets West. My dishes are easy to make and everyone can do it. Just come on and join me in my kitchen. We will have a lot fun!I use a unique mixture of Ginger, Garlic and Tumeric (in equal parts) with peppers, like long chilli spicy, habernero even Ghost peppers. It is potent and healthy.Dont't live to Eat, Eat to Live. Worked at Chefluciano's Restuarant in Chicago for 30 years. Now I am retired.
