This instant green chilli pickle is a perfect blend of spicy, tangy, and aromatic flavors that can elevate any meal. Ready in no time, this homemade achar adds a delicious punch to parathas, dal-rice, or everyday meals. Once you taste it, you’ll keep coming back for more.

Wash the chillies, wipe them well, and cut them into pieces.

For the spice mix, dry roast whole coriander seeds, mustard seeds, cumin seeds, and fennel seeds for 2 minutes. Once cooled, coarsely grind them.

Heat the mustard oil until it starts smoking, then let it cool down. Now add the coarsely ground spice mix, turmeric, salt, Kashmiri red chilli powder, and asafoetida to the slightly cooled oil, then mix it with the chillies. Add nigella seeds and vinegar as well, and mix everything thoroughly. Your instant chilli pickle is ready.

Transfer the pickle into a clean glass jar and keep it outside for one day. Then place the jar in sunlight for 3–4 days. After that, it is ready to use.
Tips
1: Always wipe the chillies completely dry after washing, any moisture can reduce shelf life.
2: Use a clean, dry spoon every time while serving the pickle to keep it fresh for longer.
