Mix the milk, instant yeast, cardamom, sugar, yogurt, whole egg, and egg white together.

Gradually add the flour and mix until a soft dough forms. Depending on the flour type and egg size, the amount of flour may vary. I used the full 600 g of flour.

Add the oil and salt, then knead well until the dough becomes smooth and reaches the windowpane test.

Shape the dough into a ball and place it in a lightly greased bowl. Cover and let it rise at room temperature until doubled in size. Due to the amount of sugar, this dough may take longer to rise compared to some other doughs.

When the dough has doubled, gently deflate it and divide it into 4 equal pieces. Each piece weighed about 292 g for me.

Roll each piece into a flat round shape about 8 mm thick. Cover and let them rise again until doubled in size.

Shape the dough as desired. I shaped mine as shown in the photos. This bread can also be made as a braid or kept simple with decorative holes on top.

For the topping, mix the egg yolk, milk, saffron, and cardamom essence. Brush over the breads and sprinkle with sesame seeds.

Bake in a preheated oven at 180°C (356°F) for 25–30 minutes. Baking time may vary depending on your oven temperature. Place a heatproof bowl of boiling water inside the oven while baking to help keep the bread soft.
