Heat oil in a wok over high heat.

Add cumin seeds and nigella and allow to crackle.

Add chilli powder, salt, turmeric, coriander powder, cumin powder and amchur powder. Fry with a splash of water.

Add green chillies and ginger-garlic paste. Fry till the raw smell is eliminated.

Add potatoes and mix well to coat with masala.

Add cilantro, mix, cover and cook 10 minutes.

Uncover and sprinkle pepper powder.

Squeeze lemon juice.

Serve hot with roti.
