Stewed Njahi

This is also called hyacinth beans. in Kenya it is known as njahe/ njahi. It is very rich in proteins and therefore good for lactating mothers.

Steps

Soak the beans prior for some hours. Using a jiko boil the beans for 2 hrs and 30 mins till soft.

Add oil in a another cooking pot then add onions and cook till golden brown then add tomatoes and cook till soft

Then add carrots and the boiled njahi and stir. add a little water for soup and the capsicum.

Add salt and cover to cook for 10 minutes. serve hot with rice or chapattis
