Dice the ingredients. Cook the beans and maize in a pressurecooker for 20minutes.

Place the cooking oil and onions in a sufuria and stir as it cooks for a minute. Add the capsicum and stir for another minute.

Add tomatoes and stir then cover for 3 minutes. When the tomatoes soften crash them completely.

Add the maize and beans then stir and add 3/4 cup water and 1/2tsp salt as you stir.

Allow the githeri to cook for 5minutes then turn off the cooker and serve.
