Beat the butter with the powdered sugar until the mixture becomes light in color. Add the powdered milk and beat again.

Add the eggs, vanilla, and vegetable oil. Mix well until the mixture thickens.

Add this mixture to the previous mixture and start bringing the dough together.

In a separate bowl, sift the flour with the baking powder, mahlab, and a pinch of salt.

Once the dough comes together, let it rest for 30 minutes, then start shaping it.

Important note: When bringing the dough together, do not over-knead so the maamoul stays tender.

For the dates: Place the dates in a saucepan over low heat with a tablespoon of ghee or butter. Cook until the dates are completely soft.

Shape the date mixture into small balls and use them to fill the maamoul. Bake at 350°F (180°C) until fully cooked.
