Ingredients

  2. 2 (12.5 Cans)Quality Chicken Breasts [fully drained]
  3. ● For The Vegetables & Fruits
  4. 1LG EX Firm Deseeded Cucumber
  5. 2/3 CupFresh Celery [with leaves]
  6. 1/2 CupDiced Vidalia Onion
  7. 1/4 CupDiced Red Onion
  8. 1/4 CupDiced Green Onion
  9. 1/2EX Firm Diced Deseeded Tomato
  10. 1/2Deseeded Diced Jalapeño
  11. 1/2LG Claussens Diced Crispy Pickle
  12. 1/3 CupDiced Deseeded Green Bell Pepper
  13. 1/4 CupParsley Leaves
  14. ● For The Seasonings [be careful not to add salt]
  15. Juice Of Half LG Lemon
  16. 1/2 tspLemon Pepper
  17. 1/3 tspCelery Seed
  18. 1 tspDried Dill
  19. 1/4 tspFresh Ground Black Pepper
  20. 1/4 tspGarlic Powder
  21. 2/3 CupReal Mayonnaise
  22. ● For The Sides [as needed or, to taste]
  23. LeavesRomaine Lettuce [or your choice]
  24. Quality Heavy Crackers
  25. Lemon Wedges
  26. SlicesDill Pickle
  27. Celery Salt

Cooking Instructions

20 Minutes
  1. 1

    Dice all vegetables and add seasonings. Mix well.

  2. 2

    This is a great brand of chicken breast and what my students used today.

    Incorporate all ingredients.

    Mix well and chill.

    Serve as a lettuce wrap with lemon wedges and cucumber slices as sides or garnishments.

    You can also serve this salad with quality heavy-duty crackers.

    Or, serve as a thick chilled sandwich with a lemon wedge, dill pickle and cucumber slices. Either way, enjoy!
